Girlie Vanilla Easter Cake

With Easter coming up on Sunday I decided to try out some baking over the weekend. I really enjoy baking, but I am not going to be on the Great British Bake Off anytime soon. If you follow my blog will know that I do like pink and girlie things, which explains the exterior of this cake.

This is a super easy cake, if I can do it anyone can!


– 115g Margarine

– 115g Caster Sugar

– 2 Medium Eggs

– 5 ml Madagascan Vanilla Extract

– 175g Plain Flour

– 2 tsp Baking Powder

– Vanilla Icing (I cheated & used Betty Crocker)

– Pink Sugar

– Cadbury Mini Eggs

– Milky Way Magic Stars


I preheated the oven at 180C/gas mark 4 before putting the margarine, sugar, vanilla and eggs in a bowl, mixing until the mixture was smooth. Then I sieved the flour with the baking powder into the bowl with the margarine mixture, stirring it all together trying to fold in air for a lighter sponge. If you have an electric whisk, I highly recommend using it now, unfortunately I don’t due to being a student. Then you just plop your mixture in a lightly greased tin and bake for 50-55 minutes.


imageAfter the cake had cooled, I iced the top and sprinkled the pink sugar on the edge of the cake’s top. Then I just piled on the chocolate.

I did play around with a chocolate tube pen, which you simply put in hot water for two minutes and then write with the melted chocolate. I need some practice with this… I felt the end results weren’t good enough for this cake this time round.

This was a super sugary cake, perfect for those with a sweet tooth!
